There are regular occurrences where I have an abundance of browning bananas sat on the side, and as someone who hates waste and throwing things away, I will always bake up something yummy that requires the use of my browning bananas, and usually it seems the obvious choice to whip up some ‘Banana Bread’, but this time I thought I’d mix it up a little and try some Banana Bread inspired DONUTS! And yes, they worked, I was pleasantly surprised by the fluffy texture but yet the crunch similar to that of those naughty fried donuts you get at the fair… only waaay better for you!

I personally love many of my baked goods to have a crunch to them instead of the usual smooth texture, so I made these with personally the best crunchy peanut butter you can buy, ‘Meridian’, as it is super creamy and mixes really well. I always make sure I have a few tubs stashed away, and by this I mean I currently have 5x 1 KG tubs as I go through it like crazy, and spooning it from the tub doesn’t help! But anyway, these super tasty, moist and crunchy donuts are made vegan and gluten-free friendly and are the best snack as they taste awesome at room temperature or straight from the fridge, but you can also store any extras in the freezer if you’re not going to eat them all within a week…are you crazy though, they’re super addictive so I don’t think they’ll last that long!

They are very simple to make as with much of my baking you just need two separate bowls for you wet and dry ingredients and then combine the two really well. When I first cooked these I really kept an eye on them in the oven as I wasn’t sure how long they would take to cook as the mixture was quite wet whilst spooning into my donut tray but I guess this is due to the small amount of ‘flour’ needed in this recipe as they surprisingly firmed up nicely once cooled more, and took approximately 20 minutes of eye-balling for doneness!

Crunchy Peanut and Banana Donuts

Serves: Approx. 12
  • 2 ripe medium sized bananas, mashed
  • ¼ cup coconut oil, melted and cooled
  • 2tbsp maple syrup or honey
  • 2 flax eggs (2tbsp flaxmeal + 4tbsp water)
  • 1 tsp vanilla extract
  • ¾ cup crunchy peanut butter
  • ¼ cup almond meal + 3tbsp banana chip flour or coconut flour
  • 1tsp baking powder
  • Mix in: ¼ -1/2 cup cocoa nibs (optional for extra crunch)
  1. Pre-heat the oven to 190C/375F/Gas Mark 5. Set aside a 12-hole donut tray (I use silicone to prevent sticking)
  2. In a large bowl combine your wet ingredients well, making sure banana and peanut butter are fully combined.
  3. In a separate bowl, combine your dry ingredients, fold in optional nibs.
  4. Bake for approx. 20 minutes but keep an eye for doneness (rising and puffing slightly and browning on top)
  5. Remove from the oven, and let cool slightly before removing, then place on a cooling rack.
