I wanted to create a really good cookie recipe as I have been trying for some time to get a healthy but unbelievably tasty cookie. And why did I not think of this before seeing as I know avocado and chocolate are a dream match made in heaven, for example this avocado chocolate spread which I have been making for years never fails me and I spread it on everything! So I’m not sure why I was so surprised by the dreamy fudginess of this cookies but they really are good and they will be made time and time again for my chocolate fix!

Now if you’re expecting a crunchy cookie then you’re not going to get that with this recipe I’m afraid but if you’re looking for a chocolate fudgy piece of healthy goodness then this is exactly what you’ve been missing and then will curb any chocolate cravings I promise.

They are rich and dark hence me describing them as decadent and personally this is how I love to eat chocolate…the darker the better. Sadly not everyone agrees but maybe this is a good thing as my partner doesn’t tuck in and therefore I’m left with an abundance of cookies to tuck in to throughout the week.

These are easy and simple to make and require placing all the wet ingredients in a food processor first and then pulsing in the dry ingredients so they are combined and then add the chocolate chips so they are also combined. Once combined then place the mixture in the fridge to firm up whilst you do some washing up or make a cup of coffee, then remove the mixture from the fridge and take a tbsp. at a time and mould into cookie shapes, but if you want slightly bigger cookies take 2 tbsp. of mixture and then place on a lined baking tray and bake for approximately 15 minutes.

Once removed from the oven, these cookies will firm up and become super fudgy and are therefore best stored in the fridge for up to 10 days…if they last that long!

I cannot believe how good these beauties are and I do not feel even slightly guilty for tucking into two/three or maybe four of these!

  • 1 ripe avocado
  • 1 flax egg
  • 2 tbsp melted coconut oil
  • ½ cup maple syrup
  • 1 tsp vanilla
  • ¾ cup cocoa powder
  • 2tbsp flour or protein powder
  • ¼ tsp baking powder
  • ¼ cup chocolate chips
  1. Preheat oven to 350F/180C/Gas 4. Line a baking tray with parchment paper.
  2. In a food processor combine the avocado, flax egg, oil, maple syrup and vanilla until well combined and smooth. Then add the cocoa powder, flour and baking powder and pulse a few times until combined with the wet mixture. Then fold in the chocolate chips.
  3. Place the batter in the fridge for 20 minutes, then take a tbsp of the mixture and shape it into a cookie and bake for 15 minutes or until firm to touch.
  4. Remove from the oven, let cool on a cooling rack before serving. Best stored in the fridge.
