I’ve neglected Waffles nearly my whole life, except those Potato Waffles, which I used to live off when I was in School; Potato Waffles, Pizza and Spaghetti Hoops – what a dream combination! But actually no, I’m not talking about Potato Waffles (yet – I am thinking about a recreation).

I’m talking about Sweet Waffles or maybe these not-so-sweet ‘Oil-free Lemon and Poppy Seed Waffles’ which I actually accidently made without any added sugar but this actually turned out to be not such a bad thing at all; but you can add a squeeze of sweetener if you wish, but I found they were perfectly delicious without any sweetener in the recipe and just a little drizzle of maple syrup over the top.

Recently I posted a recipe for ‘Chocolate Protein Waffles’, which was actually the first Waffle recipe I’ve shared! (I was shocked too), because Waffles aren’t actually something I had been making and eating, but now I’m thinking “Why the F*** not”, because they are delicious, filling, the combinations are endless and they are easier than Pancakes!

Plus I bought my OH a Waffle Iron, which he has used once; made us some delicious waffles and never used it again. So this Waffle Iron has sat neglected in the Kitchen cupboard (probably along with many other unused items) but it is now time for it to see some life!

That being said, I think Waffles are going to become ‘my thing’, until I get bored of-course, which sadly does happen quite quickly but lets’ embrace this for now with all the Waffles I can come up with and more importantly let’s talk about these ‘Oil-free Lemon and Poppy Seed Waffles’.

Oil-free Lemon and Poppy Seed Waffles

The Lemon and Poppy Seed creation came about because I recently made these ‘Raw Lemon and Chia Seed Cookies’ and I had leftover Fresh lemons which were calling out to be used in my latest obsession (a.k.a. Waffles). The combination of Lemon and Poppy Seed is a classic and one that I forget about until I have it again and I remember how much I love the Freshness of the Lemons and the specks of Poppy Seeds through the recipes. But the combination isn’t just for Lemon and Poppy Seed Cake, as it also works perfectly in many other recipes, including this refreshing Lemon and Poppy Seed Waffle recipe.

Waffles are a popular choice for Dessert and are often on the Dessert list at a restaurant but I never fancy Waffles for Dessert and I would always rather have them for Breakfast and have a Brownie for Dessert instead, but that’s just how I roll. So, these ‘Oil-free Lemon and Poppy Seed Waffles’ have Breakfast in mind, and in particular health and nutrition in mind, so that I am setting myself up right for the day ahead.

Oil-free Lemon and Poppy Seed Waffles

A few points on these ‘Oil-free Lemon and Poppy Seed Waffles’:

  1. They are Oil-free, as the recipe title suggests; instead using non-dairy plain yogurt and apple puree which are lower in fat and calories
  2. They are Sugar-free (although accidently because I forgot to add the sugar to the original recipe) but if you would prefer a little sweetness I have included an option in the recipe list
  3. They are Dairy-free and Egg-free; instead using unsweetened Soya-milk
  4. They use a combination of Oat flour and Spelt flour which are my go-to at Breakfast time
  5. They add a little extra Protein with unsweetened Soya protein powder (optional)

Oil-free Lemon and Poppy Seed Waffles

  • 1 cup oat flour
  • ½ cup spelt flour
  • 2 tbsp unsweetened Soya protein powder
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • pinch fine himalayan salt
  • 1 tbsp cornstarch
  • 1 cup unsweetened Soya milk
  • 1 flax egg
  • ½ cup unsweetened plain non-dairy yogurt
  • ¼ cup apple puree
  • ¼ cup agave syrup (optional for sweetness)
  • 1 lemon, zest and juice
  • few drops lemon extract
  • 1 tbsp poppy seed
  1. Lightly grease your waffle iron and turn it on to heat.
  2. In a large mixing bowl, combine the dry ingredients. Set aside.
  3. In a separate mixing bowl, add the wet ingredients and whisk to combine. Add the wet ingredients to the dry ingredients bowl and with a spoon or spatula, gently combine, then add the poppy seeds and combine once more so the ingredients and seeds are fully incorporated.
  4. Your waffle iron should now be heated so take a few spoonfuls of the mixture and add it to your waffle iron, spread it out so the iron is covered (I used half the mixture) and then close the lid and allow it to cook (mine takes approx. 10 minutes).
  5. Only remove the lid once it has had sufficient time to cook. Carefully remove the waffle and place it on a plate whilst you repeat with the remaining mixture (I made two waffles).
  6. Serve the waffles warm, topped with your favourite toppings; I used non-dairy plain yogurt combined with a few drops of lemon extract, squeeze maple syrup and a sprinkling of chia seeds.
