At this time of year I tend to struggle to come up with ideas for both lunch and dinner meals because it’s that funny time of year where it’s too hot too cook anything and the last thing anyone wants to do is being stuck in the kitchen for any length of time, therefore, relatively quick, simple and refreshing meals requiring minimal cooking are necessary.

During the working week I need a substantial delicious lunch that I can look forward to whilst at work and that is equally as easy to transport and double up as a packed-lunch ideal for weekends too. This recipe nails it I believe, it is satisfying, delicious, packed full of green goodness, can be a packed-lunch, requires minimal cooking and doesn’t require heating up before eating.

For this Spinach Pesto Spelt Pasta recipe I have used my ‘Spinach Pesto’ recipe which can be found on the blog, and I love it because it is easy to make, it is Vegan friendly, requires just a few ingredients and it is far healthier and just as tasty as store-bought versions.

How To:

Once you’ve followed the steps on how to make my Spinach Pesto, boil up a pan of water and cook your Spelt Pasta according to the packet instructions. Drain the pasta and combine with the pesto, set aside and then simply combine it with your favourite greens (I use greens such as watercress and rocket), roast up some veggies (I love tomatoes and courgette) and top it off with some toasted pine nuts, Vegan free-from cheese (optional, but delicious) and some sun-dried tomatoes (again, optional). Layer this all in a bowl in order; greens, roasted veggies, spinach pesto spelt pasta, toasted pine nuts, Vegan cheese and sun-dried tomatoes. Voila!

And there you have yourself a deliciously satisfying meal which is ideal for picnic lunches and dinners alike in these Summery months!

Spinach Pesto Spelt Pasta

  • Portion of my Spinach Pesto recipe
  • 100g Spelt Pasta, cooked and drained
  • 200g leafy greens (such as watercress, rocket etc.)
  • 200g roasted vegetables (such as courgette, tomatoes, bell pepper etc.)
  • 80g toasted pine nuts
  • 120g Vegan cheese (optional)
  • 16 sun-dried tomatoes, quartered (optional)
  1. Cook the pasta according to packet instructions, and then drain and combine with the spinach pesto and set aside.
  2. Next, toast the pine nuts for a couple of minutes until you can smell them toasting. Remove from the heat and set aside.
  3. Make sure all your vegetables are roasted, chop/grate your Vegan cheese and quarter sun-dried tomatoes (if using oil-packed ones, then drain first)
  4. Then assemble the dish by starting with the leafy greens, topped with roasted vegetables, spinach pesto spelt pasta, toasted pine nuts, Vegan cheese and sun-dried tomatoes. Enjoy!
