I’ve been using trail mix for as long as I can remember now as a topper for my breakfast, oatmeal, pancakes, waffles, yogurt, Weetabix if I’m feeling lazy…you get the idea, pretty much everything! I often make up my own with a combination of mixed nuts, seeds and dried fruits as I find this is a cheaper way of buying and it allows me to add what I want to top my breakfast with.

So I thought it was about time I made some sort of breakfast bar with the stuff and seeing as puffed rice cereal is my latest breakfast creation obsession, this seemed like a reasonable idea and a recipe I thought would work quite well, and I wasn’t wrong! I obviously had to add some other additions which nearly always make it to the breakfast table, namely oats and banana, plus the addition of a sweetener and a binder to hold everything in place is the coconut butter and the maple syrup liquid ingredients which combine well with the banana to make a sweet breakfast treat.

Now these are quite sweet I think which is fine by me as I have a massive sweet tooth and these are filled with loads of nasty processed sugars so I’m fine with this but some of you may wish to use less liquid sweetener and more coconut butter or you could use agave syrup which doesn’t have such a sweet taste as maple syrup and would still do the job perfectly, though I went with what I like!

These are a really simple breakfast idea to grab on-the-go or to have a snack or even a dessert snack as I think the sweetness would curb any cravings in the evening for some sugar.

How To:

Simply combine all the ingredients, place in a baking dish so that it is flat and compact and then back for 30-40 minutes until browned, depending on your oven (we have an old oven which can take forever!). Once browned, remove from the oven, place on a cooling rack until completely cooled, then they are ready to serve and can be eaten throughout the week, store in the fridge for up to 5 days to grab-and-go!

  • ¾ cup trail mix, broken up if large pieces
  • ½ cup oats
  • ¼ cup puffed rice cereal
  • 1 ripe banana, mashed
  • 1 tbsp coconut butter or melted coconut oil
  • 1 tsp vanilla extract
  • 4 tbsp maple syrup
  1. Preheat the oven to 350F/180C/Gas Mark 4. Line a deep baking/casserole dish with parchment paper.
  2. In a mixing bowl combine the broken down trail mix, oats and puffed rice cereal.
  3. In a separate bowl combine the mashed banana, coconut butter, vanilla extract and maple syrup then add to the dry ingredients and mix well until everything is combined.
  4. Spoon the mixture into the baking dish and make sure it is evenly pressed down firmly and the top is flat.
  5. Bake in the oven for 30-40 minutes, until firm and golden on top.
  6. Remove from the oven and place on a cooling rack, leave to cool before slicing into 5 bars.
  7. Best stored in the fridge for 3-5 days.
